This culinary workshop introduces and reinforces the basics, with a twist.

Cimarroncita Chef Bennett Strahan has a lifetime of experience and a wealth of passion for culinary arts. He infuses traditional continental and American dishes with a gourmet attitude, and stays creative in Cimarroncita’s remote kitchen where his “outside the box” thinking invents unexpected fine dining out in the middle of nowhere. Whether your “nowhere” is a ranch in New Mexico, or an apartment in New York City, mixing in a large measure of creativity makes your kitchen a whole lot more interesting.

Workshop topics include tools and equipment, safety, collaboration skills, time management, and resource flexibility. At Cimarroncita we pride ourselves in thinking "outside the box" when we parepare European, Continental and American dishes, bringng a gourmet attitude to traditional fare. Each evening over dinner the chef will lead a discussion of the day's workshop activities and wine selection tips. The workshop culminates with the students showcasing their new skills through the preparation of a whole day's worth of excellent meals. This all-inclusive culinary workshop experience in an histroic ranch setting unique to Northern New Mexico includes the workshop program activities, lodging and all meals from arrival to departure. You will learn techniques, tips, recipes and a gourmet attitude which will last a lifetime.

Cimarroncita Chef Bennett Strahan

Bennett Strahan is the master of the Cimarroncita Frijoles Kitchen, presenting old-ranch family style meals with a gourmet attitude, featuring continental European and American dishes. Raised on a Wyoming ranch, Bennett spent many summers in camps of the National Park system as his father constructed National Park buildings. Bennett’s passion for cooking was ignited when he was a student in the mid-1960s at the Frank Lloyd Wright School of Architecture at Taliesen West and its summer program at American School in Lugano, Switzerland. In Lugano Bennett took the culinary classes offered by the head chef of the American School and then implemented his teachings at Taliesen West where students participated in the whole life experience, with duties in construction as well as in the kitchen. Bennett’s professional design focus of hotels, hospitality and resort architecture required a specialty focus on kitchen design; in this work he acquired insights about the qualities and nature of guest dining from many well-known hospitality chefs. Bennett’s rich life experience informs his delighted approach to designing delicious meals and menus for Cimarroncita’s guests.

DAILY ITINERARY

Day 1 / July 3: Start your Road Trip with a drive up the “High Road”
Meet your guide and escort in Santa Fe and begin your Road Trip Adventure. Guests drive their own cars, accompanied by a guide and escort vehicle. Drive the “High Road” north through the villages of Northern New Mexico, to Chimayo, Truchas, Trampas, and beyond, continuing through stunning scenery and historic landmarks. Check in at Cimarroncita in time for dinner and evening campfire.

Day 2 / July 4: Legendary Local Fourth of July Rodeo in Cimarron
Experience the local Rodeo in the Old West town of Cimarron, one of the oldest Rodeos in the US which draws the best local cowboys and a special Fourth of July celebration. Enjoy cowboy dancing and good old-time Western fun. Return to Cimarroncita for dinner and evening campfire.

Day 3 / July 5: Pioneer Spirit: the Santa Fe Trail and its Legends
The legends of the Santa Fe Trail, the magical place where the Rockies meet the Plains, Kit Carson’s Rayado Outpost, Maxwell Bird Sanctuary, the Bison Pastures, and more fill this day with discoveries of the Old West. Return to Cimarroncita for dinner and evening campfire.

Day 4 / July 6: Taos: The Pueblo and The Art Colonies
Experience the centuries-old Taos Pueblo with an exclusive tour. Explore the modern day town of Taos where the Art Colonies have thrived over the centuries. The Art of Taos is featured with guided visits to public museums and private collections. Visit The Harwood Art Museum with galleries exhibiting works of the Taos Society of Artists and the Taos Moderns, a unique gallery devoted to works of Agnes Martin, as well as an important collection of Hispanic works that covers a broad range of the historic traditions of northern New Mexico. The Milicent Rogers Museum features a stunning collection of native american art, pottery and jewlery. Return to Cimarroncita for special Cookout dinner and last campfire.

Day 5 / July 7: Return to Santa Fe via Santa Fe Trail Route
Back on the road, returning to Santa Fe via the historic route of The Santa Fe Trail, with stops at ranches, forts, villages and the Pecos Heritage National Park along the way, with a lunch stop at a landmark hotel in downtown Las Vegas, the historic commercial and railroad hub of the area. Overnight in Santa Fe.

Expand your knowledge of the cultural center of the Southwest with a full day tour of the oldest capital in the U.S. with its art museums, galleries and historic sites downtown.

PAINTING NEW MEXICO

August 8 - 11, 2013

Capture the nuance of landscape.

Taos artists Claudette Barker and Jim Barker have a keen eye for the nuance of Northern New Mexico, their paintings evoke the richness and soul of the landscape. Join them in exploring your own art through painting the landscape of this beautiful high country valley. You will learn how to compose your subject from the expanse of high country vistas, alpine meadows and the meandering Cimarron River. Enjoy the use of strong, rich colors and values to achieve your finished painting. Come with a great attitude and a desire to learn and to paint from nature.

Daily demonstrations will show you how to get started. Claudette will be working in watercolor and Jim in acrylic. Individual help with your painting will follow, with a positive critique at the end of the session. All skill levels are welcome and instruction will be provided to get you to your next level.

The Barkers recently opened Barker Gallery in Taos, and are represented in several galleries across the country. Claudette has taught art workshops for more than 25 years and enjoys sharing her knowledge and enthusiasm with her students. ITINERARY

Day 1: Morning: Taos Art Tour
Meet at Claudette and Jim’s studio/gallery; take a short walking tour of Taos museums and galleries to get a feeling of the incredible art history of Northern New Mexico. This activity is optional. Enjoy an early lunch in Taos on your own. If you prefer, meet at Cimarroncita mid-afternoon for workshop check-in and orientation.

Day 1: Afternoon: Arrive Cimarroncita mid-afternoon.
A beautiful 45-mile drive from Taos -- over the Taos Mountains, across the Moreno Valley and into the Cimarron Canyon -- takes you to Cimarroncita, at the heart of the Cimarron Canyon. Workshop check-in and orientation at the Cimarroncita Kiva and Art Studio.

Day 2: Full day painting.
Painting with guidance and critique from instructors. As all levels are welcome, instructors will assist participants with flexibility and as needed.

Day 3: Full day painting.
Painting with guidance and critique from instructors.

Day 4: Morning: Final workshop activities
Workshop wrap-up and final critique. Depart Cimarroncita late morning.

RATE: $875 per person, all-inclusive

A list of recommended supplies will be provided to participants who are encouraged to bring their own supplies. If students chose, a $65 fee allows use of art supplies provided by the Barkers, including watecolor or acrylic paints, brushes, and watercolor paper or canvas panel. An event not to be missed for those women whose dream getaway involves the keywords horses, casual, and loads of fun. Equestrian director Nancy Burch of Road Runner Tours has been wrangling horses in this part of New Mexico for thirty years, she knows the Cimarroncita back country, how to match a rider with a horse, and how to have fun.

The weekend getaway features a full-day Saturday Trail Ride with a gourmet picnic lunch on the trail. Nancy will lead the rides through Cimarroncita's high mountain back country where guests will experience the spectacular vistas of the Sangre de Cristo range of the Southern Rocky Mountains, abundant wildlife, the colors of summer wildflowers, the scent of sage and a fabulous day on horseback.
